Chocolate Chip Cookie Bars

4-1/2 cups all-purpose flour
2 teaspoons baking soda
1-1/2 cups butter, softened
1-1/2 cups packed brown sugar
1/2 cup granulated white sugar
2 (3.4 ounce) packages instant vanilla pudding mix ($1.00)
4 eggs
2 teaspoons vanilla extract
4 cups semi-sweet chocolate chips ($2-3.00)

Preheat oven to 350 degrees Fahrenheit
Into a large bowl, mix together all the ingredients except the chocolate chips.
Then, stir in chocolate chips.  If it's too hard to stir these in, use your hands to gently work them into the dough
Spread dough into an ungreased 13" x 17" jelly roll pan.  I used my hands at first, then smooth it out with the back of the spatula
Bake for 20 to 25 minutes.  Bars will be browned when done
Once removed from oven, set pan on a cooling rack, when cool, leave bars in pan, cut and serve

Usually I cut the recipe in half, it makes so many! But they are so yummy!

Estimated cost: around $5.00
I would hope you have most of those ingredients at home, except the ones I put prices for.

Oh, also, I just thought of something else I make that's really reasonable and to die for.  This is my own concoction, so don't kill me if you hate it.

CHICKEN AND MUSHROOM ALFREDO

1 container of your favorite Alfredo sauce
1 lb. of chicken breast skinless and boneless (cut into small squares)
1 small container of mushrooms, sliced
linguine noodles (depends on how many noodles you want, purely up to you)
1 t. garlic
1/3 t. season salt
-whatever other seasoning that sounds good to you.  I swear, no matter what, it will taste great-

Put noodles into a pot with as much water as it says on the back of the package.  Make sure to do this first so that your noodles and Alfredo sauce will be done at the same time.

Throw the chicken into a skillet with a tiny amount of butter just so it won't stick to the pan.  Add in the seasonings you want on the chicken.  Cook until the chicken is white all the way through.  Add in the mushrooms (oh, you can also use canned mushrooms, sorry, I forgot to add that) and the Alfredo sauce.  Cook until hot.  

Throw onto some noodles in a bowl and enjoy.  Mmmmmmmmmmmmmmmmmm.

This will cost you about $7, maybe a little less.  Chicken ranges in prices depending on sales, so it purely depends on that.  Alfredo sauce is only about $1.20 to $1.50 for a container so that won't add much.  Overall, it's cheap and oh so delicious.

And as for the time it takes, maybe 20ish minutes.  Just make sure you take the chicken out of the freezer earlier so that it isn't frozen.

You will need 4 thin slices of deli turkey, Ranch Dressing, red peppers, green peppers, 10 inch tortilla shells.

1) Put ranch Dressing on the shell. put as much or as little as you want.

2)put the turkey on top of that so that the whole thing is covered in turkey.

3) cut (anyway you want, i always do little squares) the peppers both kinds, put on top of the turkey.

4) wrap up and enjoy


the cost depends on what you have in your fridge and how big of containers you get. but it should be around

$10.00

Lime Teriyaki Salmon:

Ingredients
- Salmon fillets with skin on one side
- Sugar (50g/fillet)
- Minced ginger
- Minced garlic (1 clove)
- 2 teaspoons Lime juice/fillet
- Soya sauce (enough to cover fish)

Cook time
- 15 minutes
- 10 minutes preparation (1 hour interim)

Instructions
- Mix everything apart from the fillets into a marinade (make sure everything dissolves)
- Marinade fish for at least 1 hour
- Brush fish skin with marinade and place in v hot pan skin side down
- Place a lid on the pan (this is so that the marinade burns on the skin and thus the smoke helps flavour the salmon) and leave until cooked through
- Before serving, sear for 20 seconds on the skinless side

Cost
Person 1 - $10 (because of ginger, garlic, soy sauce)
Thereon, just the cost of the salmon fillets

Johnny's Cheese Crackers.

This is unbelievably simple and my boyfriend loves them.

Ingredients:
Saltine Crackers $3.00
Sliced Cheese $2.50
Johnny's Seasoning Salt $2.00

Put the Saltines out on a plate, then divide the sliced cheese into 4 sections. Put one section of cheese onto each saltine cracker. Sprinkle with Johnny's Seasoning Salt and then microwave until the cheese begins to melt and bubble.

Take out of the microwave then eat!

Total Cost: $7.50

GORGEOUS CHICKEN CURRY!

1It's simple! all you need is one packet of curry powder, chicken breast [raw], red pepper, green pepper, A small of carrot, 1 litre of water, onion and anything you would like to add for flavour! you'll need a large saucepan also, with oil. dont forget rice!rice  

2 first, heat the oil in the sauce pan until steaming, then add chopped chicken breast [raw], cook until white and then add in carrot, after 30 seconds of stirring, add in onion, keep stirring for 30 seconds more and add red + green peppers. then add in the extras you have.
[Dont forget to cook the rice while doing this by following the given instructions on the packet

2 When you have that done, add in your curry powder [without water]

3 after 30 seconds of stirring, and the curry has stook to the veg and chicken, add in your litre of water.

4 leave cook [DO NOT ALLOW TO BOIL, BUT KEEP HOT] for half an hour.

5 By now your rice should be done. Pour on a plate and add your chicken curry and there in front of you is your Gorgeause Chicken Curry!

This is a home recipie and it turned out lovely for me! So Bon appetite!

SERVES 3-4 PEOPLE. TOTAL: UNDER €10

Mushroom Patacone Pita

Prep Time: 10 Minutes
Cook Time: 15 Minutes
Total Time: 25 Minutes

3/4 cup coconut oil
1 semi-ripe plantain, cut into 2-inch pieces
3 portobello mushroom caps, cut into strips
1 avocado - peeled, pitted and sliced
4 cups coarsely chopped arugula
2 warmed pita bread rounds, cut in half

1. Heat the coconut oil in a skillet over medium heat, and cook the plantain pieces just until tender but still firm. Remove from heat, and drain on paper towels. Stand the plantain pieces on end, and with a small dish or the bottom of a cup, gently flatten the plantains. Return to oil, and continue cooking until golden brown. Remove from heat, and drain on paper towels.

2. Place the mushrooms in the skillet with remaining coconut oil over medium heat, and cook until tender.

3. Stuff pita bread halves with equal amounts of the plantain, mushrooms, avocado, and arugula to serve.


Cost: Should be under $10 as the pita and coconut oil will most likely take up most of the cost.

Tava, Turkish Stew

Prep Time: 15 Minutes
Cook Time: 40 Minutes
Total Cost: 55 Minutes

Ingredients:

2 tablespoons olive oil, divided
1 1/2 pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
1/2 (12 ounce) jar roasted red bell peppers, drained
1 (14.5 ounce) can diced tomatoes with juice
1 (6 ounce) jar mushrooms, drained
1 onion, diced
1 tablespoon minced garlic
salt and pepper to taste
1 (16 ounce) package shredded mozzarella cheese

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
2. Heat 1 tablespoon oil in a skillet over medium heat, and cook the chicken until juices run clear.
3. Puree the roasted red peppers in a blender or food processor until smooth. In the prepared casserole dish, mix the cooked chicken, roasted red peppers, tomatoes, mushrooms, onion, and garlic. Season with salt and pepper. Drizzle with remaining 1 tablespoon olive oil, and top with mozzarella cheese.
4. Bake 30 minutes in the preheated oven, until cheese is melted and bubbly.


Cost: I have no idea, but I can't imagine it being more than $9-$14.

Alex's CRAZY Quesadilla

2 Teaspoons of Cooking Oil

2 Flour Tortillas

1 cup shredded cheese

1/2 cup of chopped cooked chicken/beef

1. Heat Oil in a nonstick skillet, add one tortilla, layer with cheese and chicken.

2. Cover with second tortilla.  Heat until cheese melts and tortilla is golden.  Turn over, and sprinkle cheese on top of the tortilla.

3.  Cook until tortilla is crisp.

4.  Enjoy!

INGREDIENTS:

3 large bananas              (50 cents)
3/4 cup sugar                 (Basic)
1 egg                            (Basic)
1/3 cup melted butter      (Basic)
1tsp baking powder         (Basic /1 dollar for can)
1/2 tsp salt                    (Basic)
1cup sifted flour             (Basic / 2 dollars for packet)

Brown sugar                   (1 dollar for small packet)

All costs rounded up to nearest 50 cents.

COOKING INSTRUCTIONS:

Utensils needed:  
Masher,  
Measuring cup,  
Teaspoon,  
Tablespoon,  
2 or 3 bowls,     
Whisk or fork,  
Muffin tray.

Preheat oven: 300F, 150C, Gas Mark 3.  
Serves 7 large, 15 small.

Grease and lightly flour baking tray.  

Have all ingredients prepared

1.Mash all three bananas in a bowl. Until light and frothy.  

2.Add sugar, slightly beaten egg, and melted butter. Stir moderately.

3.Add dry ingredients at once, and stir again.  

4.Pour batter into baking tray cups. 3/4 of the way.

5. When finished, sprinkle muffins with brown sugar. Leave to melt for 1 or 2 minutes.

Ta da.
