Bright, colorful, and delicious!

--2 ears of corn, cut from the cob
--1 pint grape tomatoes, sliced
--2 cups green beans, cut into 1-inch pieces and blanched
--1 shallot, minced
--Olive oil and red-wine vinegar

--In a bowl, mix corn, tomatoes, green beans, and shallot. Drizzle with oil and vinegar, and season with salt and pepper to taste!

It is very likely that you can substitute those things for, like, sugar snap peas, omit the shallots (maybe add some chive or green onion for a different flavor) and use different tomatoes.
