Ricotta-&-Spinach-Stuffed Portobello Mushrooms
225 calories, 12 grams fat, 12 grams protein, 4 grams fiber
Serves 2

Ingredients
2 large portobello mushroom caps
Salt and pepper to taste
1/2 cup part-skim ricotta cheese
1 cup chopped fresh spinach
1/4 cup shredded Parmesan cheese
1/2 cup prepared marinara sauce
Directions
1.Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray. Place mushroom caps, gill-side up, on the baking sheet. Sprinkle with salt and pepper. Roast until tender, 20 to 25 minutes.
2.Meanwhile, mix ricotta, spinach, 1/8 cup Parmesan and pepper in a bowl.
3.Heat up marinara sauce (roughly 30 seconds to 1 minute in microwave).
4.When the mushrooms are tender, discard any liquid remaining in the caps. Return the caps to the baking dish, gill-side up. Spread 1 tbsp. marinara into each cap. Fill each cap with the ricotta filling and sprinkle with the remaining 1/8 cup Parmesan. Bake until hot, about 10 minutes. Serve with the remaining marinara sauce.

Grilling is easy...

Turn the grill on medium high.  Lightly season the meat.  Take a paper towel and dip it in oil, and brush it over the grates.  Put the meat on diagonally, cook until done.  Chicken (if it's a breast) you want to do between 4-7 minutes a side, depending on the thickness.  Pork (if it's a chop) you want to do 5-8 minutes a side depending on how done you like it.  Don't over-complicate it.

For another side, you could do:

Mashed Cauliflower - tastes like mashed potatoes

Quinoa - You can find instant or ready cook variety of this grain in the rice aisle at the store

Brown Rice & Beans - Boil some brown rice and mix with a can of black beans and spices.

You could, but you want to leave the bbq sauce off until the end, because the sugar in the sauce will burn.

I am sure that would work actually.
You might not even need the bbq sauce if you wanted to do like.. butter and garlic and whatever other spices you wanted on it with the peppers and stuff, but bbq would work too I'm sure.
If you're grilling it, basically you just have to turn the grill on, slap your meat on the grill, in foil or not, however you want to make it, then just make sure you don't burn the juicy goodness out of it, and don't undercook it.
It's not very hard. =]

You can do that. Just a question, don't you need at least 1250 calories if you're dieting? Maybe I'm wrong but that 857 just seems a little low to me. Anyway, hope the dinner goes well.
