Well, muscles are sorta designed as scalable, changing parts of the body and therefore have the capacity to "grow" or "shrink" depending on how much they are excercised. That being said, I somewhat doubt eyesight/hearing can be excercised in a similar way to do anymore than improve them to a certain threshold. The way I see it is, there is a threshold for how small/large your muscles can grow and become stronger. There is also a threshold for how good one can see or hear - with seeing it'd be 20/20 vision. That being said, it is a known fact that focusing your eyes in something quite close to you for long periods of time can cause your eyes to become accustomed to that "threshold" of seeing and reduce the quality of seeing something farther away. This can be considered more of a flaw as the eye does not become stronger at all, in fact it merely becomes weaker as the body seems to think it doesn't need to see in the distance as much. However, if we were to excercise our eyes to achieve 20/20 vision in people that might not have perfect vision, we still would only be able to achieve 20/20 as that is the threshold of the scope of human vision. So by saying we could perhaps "force" evolution by excercising our bodies in different ways, you are almost inferring that we "evolve" as we achieve bulkier/stronger muscles. However, this is not the case. It is merely a case of the muscles growing and shrinking depending on how much or how little we use them, and they will never grow/shrink past their threshold of strength/growth.
