Adding OS X should be easy if its mount point is in a form that GRUB will recognize.  To the best of my knowledge mount points are pretty standard.  

  Adding Vista is easy and just involves adding a mount point along the lines of "/hda2"


 

 So, I add OSX, then install Ubuntu, and it should pick it up?  

 Later I then just add in Vista?

To the best of my knowledge it should work.  If you have a spare hard drive try it on there first.  


I have an old 10gb that Im wiping to put OSX on. Im going to partition my 100gb data partition for Ubuntu, and when I add Vista, Im going to just buy a new hard drive.

I just remembered that I couldnt figure out how to get the Video drivers I needed for Ubuntu to work last time, so Ill have to see if I can even get it to work this time.
