I used to play the violin, and it wasn't that hard at all. I guess it's like playing any other instrument, you just have to learn how to read sheet music.

Pffft, not when you're a percussionist in an orchestra. My friend got blisters from the straps of the cymbals.
I suppose (and Fern is going to eat me alive for saying this) that the recorder is easiest to start of playing, but like all instruments, it is difficult to master.
Piano's easy as well. But maybe that's because I grew up playing it so I don't remember actually learning it.
Ohhh, French horn is a bitch. But that's because I suck.
