Atheism isn't a religion.
Neither is theism.
But theism makes religion a given. I cannot remember a single case where theism did not then proceed to generate a religion. It's practically a given, so I just jump that little nitpicking.

And atheism does not exclude religious beliefs either.

Atheism does not imply 100% logical rationality and a mind that correctly uses critical thinking and is intellectually humble and desires to understand what REALLY IS going on in the universe, although in most cases you might say that that is a given when someone calls him/herself an atheist. That type of mind usually comes through a scientific education. Theism by definition does not listen to rationality, it leaps over that and gives importance to faith in thought-experiments that hold no sound foundational evidence. Curiously enough I haven't found a reason as to why they feel compelled to do that. Raelians, for example, are atheists because they think aliens have found that out, and believe it based on authority, which comes from a guy who has spoken to those aliens. Same with Buddhists, although they don't believe in a theistic god per se, they have a few awkward nonsensical metaphysical beliefs of their own. If you drop all the supernaturalism, you really don't have a religion, you stop being a religious person, you just become a good human being who holds behavioural ideals and stop at that definition.

I love how you have three different options for Christianity and some denominations, yet you skipped Sikhism, Taoism/ Daoism, Bahai, Jainism, Shinto, Scientology (:P), Zoroastrianism, etc, etc, etc.

So what would you call a theist that, other then their belief in a god, 'uses critical thinking and is intellectually humble and desires to understand what REALLY IS going on in the universe'? Theism 'by definition' does not mean what you seem to believe it means. Your bias has apparently clouded your ability to understand the true meanings of words.
