You could use some other sort of chemical, but water has the benefits of being non-toxic, liquid, appropriately volatile and, in most places, very available.

You could make most carbohydrates, simple proteins etc. out of oil without adding any new atoms. It would just involve a shitload of energy.

No.  And you can't make proteins from oil no matter how much energy you put in.  The only thing you can make from oil is oil (for your fat intake) and carbohydrates (strictly from a theoretical standpoint because it would, as Samsoniteman put it, take a shitload of energy) but thats about it.  Oil (both triglycerdies and crude) has no nitrogen.  Without nitrogen intake, we would quickly die.  No proteins, few vitamins (if any), and no minerals can be made from oil.
