I'm going to quit my job soon and I was wondering how I should do it.  When giving my two weeks notice should I just tell them or write a letter?

It's always better to write a letter. That way they have a physical copy in your file, so in case someone decides to try to be a douche down the line you have proof that you were a responsible employees. You're simply covering your own ass writing a letter.
