If I had to pick: Mail. Fuck Microsoft. I don't want your fake-ass, half-working, Outlook wannabe Entourage bullshit. And Outlook isn't that great either.
Mail is nice. It's simple, works, and it's down to the point. However, I honestly use webmail most of the time.

Entourage all the way. I can't stand these "simple" clients. If i wanted something so simple I would use the webmail. I use a client because I want a decent feature set.

Entourage tends to be more bloated than Mail. Mail is a light, simple, clean application that is very integrated into your operating system and connects very well with the set of developer APIs that Apple has released. Entourage is a similar product to outlook on windows--it has a calendar, contact manager, email, etc. But all of that is already on OS X. If you want to switch to Entourage, you might as well stop using Address Book and Calendar (which are also very nicely integrated into iLife).
