Why not make it all vegetarian so she doesn't feel left out? There are plenty of good meals you can make that have no meat and I'm sure you could do without it. If you absolutely refuse sea food and steak is always a go and it's great on top of a salad so you wont have to have pasta or rice and the vegetarian will not feel left out at all.

Cous cous is a really fun lite alternative to pasta/rice. and relatively easy to prepare. It would go great with lamb, pork, or fish. you could do it mediteranean fairly simply.
pork is usually a red wine meat
fish is white wine, and lamb can be both.
i can dig up some pretty cool easy mediteranean dishes for you?

That website is amazing, because it tells you the recipe AND notes how many stars it has. There are also comments from the users, and they usually post about how it turned out.
