TO change the colour for a gradient you need to click on the thumbnail preview of the gradient in the top left of the screen. If you click the arrow on the right hand side of that box then you can change the gradient to another present in the drop down window. Or if you want you can double click the gradient thumbnail and define your own gradient which can have as many colour points as you like as well as transparancy. If you are using the very first gradient then that is actually foreground -> background, so you can change that simply by changing the foreground and background colours.
Before you do anything make sure you are using a colour image and not a grayscale image 
- go to Image and then go to colour depth and make sure it is either 24 bit or 32 bit. If it's a greyscale image then you can't use a colour gradient
