I think that my girlfriend's the most beautiful person on the planet. However, she thinks she's hideous, and it's really impacting her life, and it's starting to affect our relationship too. She cannot take a compliment about her beauty at all, she believes that it's to do with my poor eyesight. She's incredibly body shy, she'd rather overheat than reveal much skin at all. She's even like this in private with me. Nothing I say seems to be able to build her confidence in herself at all. I'm really concerned, because it's a major hinderance in life, not being happy with the body you have. I want to make her happy. Any thoughts as to how I can go about achieving this?

Well... I think you need to talk to her. Don't just constantly tell her she's beautiful, tell her that her inability to see what you see in her is starting to cause problems for your relationship. Reinforce that you think she's beautiful, and ask her what you can do to help with her insecurities.

Well I don't even constantly tell her she's beautiful, just when it seems right to :/ I'm worried that hinting that there might be issues in our relationship could upset the status quo for the worse... Because I'm really happy at the moment, and I managed to screw up my last relationship by trying to patch up the flaws.

Then I guess keep doing what you're doing, maybe make more of an effort to tell her how beautiful you think she is, then leave it alone for a while. Getting over that stuff takes a lot of time.
