When you're learning songs by ear on a specific instrument (for me its acoustic guitar at the moment and I'm listening to David Bowie) and you come across some chords but you can barely hear them, what the fuck do you do? Do you have a way to get around that? I'm listening to Soul Love, and I'm figuring out the chords just by accident mostly. I mean sub-conciously it started because I was finding the note David Bowie was singing and I'd play a major or minor on that note until it fit the song, I only realized I was doing that a second ago, but I'm still not sure if I'm right because I can't even hear the actual chord in the song, I just hear "scratch scratch scratch" of the strings but Bowie's voice is to loud to hear individual notes in it.

Eh. Improvise. Pick one that sounds good with the other ones. Every song I know that I didn't write myself, I learned by ear, and improvisation is key.

This. You can either look up the sheet music for it, or the Tablature.
