You need to 'mount' it so that the system thinks it's a CD Drive. Daemon Tools is free and can do exactly that.

Growl - Universal system notification client, works with a bunch of apps, and you can get Gmail+Growl to integrate with above app.
Handbrake - Free DVD ripping utlity for backing up and converting movies to iPod/avi/mp4 format.
MainMenu - Free maintenance utility
TinkerTool - Lets you configure some advanced Finder/Safari options
QuickSilver - Highly recommended application launcher (as well as being able to do so much more with plugins).
StuffIt - If you're like me and you download a lot of crap you're going to need this to open some formats that Apple's own image extractor doesn't support.
Transmission - Great bittorrent app.
TextWrangler - Awesome notepad equivalent (but much better).
VLC
Youpi Optimizer - Can get rid of a lot of space taken up by local language localisation installed by default.

For Safari you can get SafariStand, as well as Saft (paid for but well worth it), SafariBlock and Inquisitor.

That's all I can think of at the moment, I'll update it later if I remember something else.

Here are a few that I like to use:

iStat Menus - Display vital system info (CPU and RAM usage, fan speed, network ins and outs, temp, etc...) on your menu/tool bar. It's a very useful program.
PTHPasteBoard - Saves (in a stack) everything you copy to your clipboard. Then via an icon in your menu bar, paste any of your last 100 item copies. A premium version includes syncing pasteboards between different computers.

I am getting my MacBook later this week, I'm pretty sure. (New style white one with the 9400m gfx chip)

What programs do I need to have? I'm an ex mac user, and obviously Adium will be downloaded.

I got everything figured out. Not sure what the specific problem was. But I think it was one of my Adons. I took all of my addons off and it was alright.
