Depends - most of those sayings are bullshit anyways.

Generally speaking, love is something that you build up over time (keeping in mind that infatuation/attraction and actual love aren't the same thing, though the former may certainly lead to the latter).

Whether you "know" it or not isn't even terribly relevant, because whether you are in love or not is not a binary proposition. That is, it's not either-or.

Everyone is different.  I thought I was in love twice and in both cases it took 6 months to a year to realize they were wonderful experiences but there were too many differences to get over.  Both are in their best behavior early in a relationship but the real person evolves as a relationship ages.  In retrospect I don't think either one were really love but the need to have an emotional and very personal connection at that particular age.  However, out of no where, completely unexpected and not prepared for at all a girl walked into my first class in my second year at the university.  I was mesmerized, stunned, speechless and totally out of control of myself.  We have been together for three years and planning marriage. It was love at first sight and I still get excited every time I see her.
