Most likely there are specific college requirements for that career.

I'm guessing medical school or something of the sort.

I'd talk to an advisor at your school. They can guide you in the right direction.

I'm sure biology and anatomy would be helpful, pretty much you'd need the same things as a normal doctor would need.

A Bachelor of Science degree in Biology, Anatomy, Chemistry, BioChem, Nursinh or something along those lines would help, especially if you took a Pre-Med option. When you get to Medical School, that's when things start getting specific.

Also, be good at saving money, because even though anesthesiologists are paid well, they are the doctors who most often face malpractice suits.

Anesthesiology is a medical speciality. Your college major is irrelevant, but you'll need to take the courses required by most med schools (gen chem, organic chem, biology, most require a math course and an english course, a few require at least a semester of biochem) and you'll also need to take the MCAT in your junior year of college.

After you get your MCAT scores, apply to schools (usually a minimum of 10), and you'll spend senior year going on interviews.

In college, make sure to spent the first three years exploring extracurricular opportunities. Shadow doctors, volunteer at clinics, do whatever you're interested in on top of that. Throw in some research if that's your thing.

In the US, after college you can expect 4 years of medical school followed by 3 or so of residency and then however long specialty training takes.

Only 2 of those years are actually classroom-based, everything else is basically working in a hospital.
