It's not slutty if you've slept with them in the past, right? Like, you go to a party to meet up with an old boyfriend, who is coming out of a complicated relationship, and you guys spend a lot of the night flirting and making out, and you end up on the floor at your best friend's apartment half naked, and then you just give in and have sex? Not slutty, because... you had a thing in the past? Or slutty because they're not 100% single, and even though you like them, you don't really want to date them again, just be friends?

Define "coming out of" a relationship. That is my biggest concern. I don't judge people based on who they have sex with, but since you seem concerned with a general societal definition of 'slutty,' that is generally defined by the number of people you have sex with, not who, so no, doing an ex does not necessarily classify you as slutty. Though some people may be concerned based on your description of events that you do not have a horrible amount of self control, and might end up doing something that you regret, one day.
That last part is dead on unfortunately. I need to learn self control before I do something that can't be fixed.
