Depends on what kind of essay it is.

In general, all essays should have a starting and ending paragraph.  Your introduction should contain his thesis.  You should typically have at least 3 supporting points for your essay as well.

Are you talking about a college application essay?

Research the college's strengths and say why they mean a lot to you, and how you represent the college's image. Bring in personal achievements and analogies to support your strengths and how they help reflect the rigor and pride of the college you're applying for.

Have him just be himself.  Trying to sound like the ideals of the college matter personally to him or some other such flattery will be seen straight through.  No one wants to read things like that.  The best topic would be something unique that happened to him, that either tells what he is like as a person, or is related to the domain he wants to learn about.  Anything that comes from the heart should work out, and as long as it's half well written it should be fine.  They're looking way more for a taste of personality than writing skill.
