The funny thing is that a German Jew, an Ethiopian Jew, a Palestinian Jew, a Persian Jew, and a Chinese Jew look nothing like each other.  Racially, they are far more similar to the people of the place they come from.

Of course there are Jews that are white. A "Jew" is not a race, but rather, a religion / culture, which thanks to the nationalist idea that each language and culture is its own race, people have been led to believe that Jews are a separate race.

Sometimes there are subtle visual differences between the native people of the land and the jews who live there. Take ethiopian jews  for example. They have a kind of mixd color skin rather than a darker color skin common for the region of the world.
But you are fairly right. I mean by no means are they completely white, and they certainly don't look like jews from places halfway across the world. Iranian jews look like they are from the middle east, chinese jews look asian, and european jews look european.
After such a long time, many jewish groups have taken the appearance which is common in the places which they dwell, rather than where their genes may have been originally derived.
It is not unlikely that people both converted into the religion and married out of it.
