Uh, I guess it's because I have so many male friends, I've basically forgotten how girls talk.
Lol, but if I see a really badly typed/spelt/Myspace-worthy post, I automatically (usually correctly) assume it's a girl.

Yeh it depends on the content. But generally it's not hard to tell methinks.

I don't mean by subject matter, I mean by the way that they talk.
The structure of their sentences, the syntax they use, how excited they are in posts, etc.

Oh. Hmm, I've never really been able to pick up on that. Maybe I'll try to see if I can do that.
Maybe it's weird that I'm so successful with it, or maybe I'm only successful with it in certain types of posts, so I assume I am good at it all around through confirmation bias.
I really do think it's obvious most of the time though, I really believe that girls write in a different way than men do.

Mm, it depends on the post.
When it comes to grammar and syntax, that tends to lean more towards being an age difference than a difference in gender. It really more comes out in tone. Girls tend to be a bit more willing to listen to the other side, and can sometimes actually change their positions on things over time. Guys tend to have a bit more of an "I'm right; you're not" tone to their posts. That's not saying that girls are never arrogant or that guys are never open-minded, but those are the trends I've seen.
BUT I don't usually care about gender when I'm responding to someone.

I disagree, for the most part, they're post whore preteens just trying to cram as many posts into their count as they possibly can so they can try to sell them to others. (Like me).

No, you're absolutely correct. I find it to be extremely easy. I assumed most others did, as well.
The only time I remember being surprized after I looked at the gender listing was with Shh, but then it turned out that he was really a girl.
