I'm an exchange student in the US. And I find my classes to be very easy. I am getting full marks in quizzes without studying at all. Or are you supposed to get high marks for quizzes anyway? I'm not sure. They seem to only test the main points that the lectures teach you. The lectures themselves seem very insubstantial.

So my question is... Am I just at a not-so-great university? I thought the difficulty wouldn't differ greatly between universities because GPA's are nation-wide, right?

The difficulty can vary between different school, different classes, and different teachers. Often different teachers for the same classes may be harder or easier (for example, I had a Biology class with one professor that was pretty easy, but people who took the same class with a different professor found it nearly impossible).

But there ARE some not-so-great universities. Harvard, obviously, is going to be harder than a little no-name state college in Kentucky. You might also just be lucky and learn well the way that professor teachers. There are a lot of variables to it.

It's very different.
Difficulty can change between teachers as well.

I took the same course twice once with 2 different teachers.
With one teacher I got a 56, and with the other I got an 89.

Yes there is definitely a difference in difficulty between different colleges.

Same applies for majors, even in the same college so maybe you just have an incredibly easy major?

GPAs are nation wide but there are always exceptions. Yes Harvard is a pretty hard school that needs a pretty good GPA but there are other schools that demand just as much to get accepted but aren't going to be as difficult as Harvard.

[edit, name of uni]. It's not great but it's not too shit either, right?

In my home university in Sydney, courses vary widely as well, obviously depending on teachers and the nature of the course. But I'm talking about getting 100%,100% of the time at the moment. I'm trying to keep an open mind but I feel elitist and frustrated.
