On my availability sheet  I said I could but the next morning I knew I couldn't so I sent them an email saying I wasn't able to work. This was a week before the roster was finalised. I'm still rostered on and they are really anal about the rosters and no one can change with me because everyone is working that day and a couple people are unavaiable. I'm about to call them up now..what should I say and who's in the right here..

It depends on why you can't work that day. My opinion: If it's really all that important, ask them to take the day off and they'll understand.
