I have a lovely sirloin steak and stilton cheese.

Just presume i have other small ingredients...

Have you got any tips to make it very nice?
How do I make the stilton sauce?

Sear it in the pan, then whack it in the oven for 10 mins. And for god sake, let it rest.

I would marinade it overnight in some red wine, garlic, rosemary, and thyme since sirloin is a nice cut, but not the most tender. Then I'd either grill it up, or do it in a pan. Either way the most important thing to remember is low and slow, don't rush it. If you do it in a pan, I'd sear it in some high quality fat, probably a nice olive oil, on each side to lock in flavor, then turn it way down and let it cook for at least 20 minutes. at that point, add in any cooking liquid (more wine, or some beef broth) and any herbs (too early and they'll wilt/burn). Personally, I think with a nice chunk of meat, a cheese sauce is a little distracting, and I don't have any recipes, you'll have to look elsewhere for that.

Cook it so that it's still a little bit pink on the inside, but not too bloody.
