Why do you remember some dreams and forget others?

It's all about dream recall. Simple as that. You can train yourself to remember more of what happens in your dreams by keeping a dream journal.

Buy a notebook and keep it next to your bed. When you wake up DO NOT move. As soon as you move you tend to forget parts of your dream. Once you remember as much as you can turn over and open up your journal and write as much as you can down. Do this every morning.

When you do this for about a month. I guarantee you will remember at least 2 dreams a day, and your dreams will become ALOT more vivid/clearer.

Good Luck
