Today I burnt off 630 calories at the gym..is this a good start combined with healthy eating every day or do i need to aim for at least 1000 calories.

Maybe not, but they guestimate. Weight loss comes down to one basic law of biology. You lose weight if you consume fewer calories than you burn. So Michael Phelps can eat 5000 calories or whatever ungodly amount he eats, but he stays skinny because he swims 8 hours a day, burning huge amounts of energy. So how much work you will have to do to lose weight depends on your fitness level, overall condition, diet, calorie burn level and other factors.
