My favourite, not exactly unique, is just fried potatoes and onions with chili powder sprinkled on them, or any other spice you like. You can get really creative with what you put on them. My mom does.

also, my bfs fav dish is crumbled bacon, chopped broccli and cheddar cheese all blended together with mashed potattos then baked in the oven

Make cheese sauce
Then slice potatoes(make them all even as best you can)
Then pour the cheese sauce over the potatoes in a pan.
Dump some cubed ham and onions(if you want I prefer without)
Then bake it in the oven untill the potatoes are soft enough to poke through with a fork.
Yummy
