One of my biggest problems is when the characters are talking. I tend to make them talk like they would really sound, quickpased and scatterbrained, often cutting eachother off or joining in unison on a word or phrase. When I do this, it's too inconvinient to write:

so and so replied "blah blah blah". so and so glanced at blah blah, "yada yada", he shot back.

I know there isn't one way of writing, but would it be unprofessional/bad if I did it this way...

*scene with details and all that garbage"
"blah blah blah" character one spat
"blah blah blah-"
"blah!"

Does anyone know what I mean?

I know what you mean. It's been done before, and it's worked just fine.
Depends on the theme/subject you're on about.
