what is the difference in unbleached and bleached flour?

The flour is bleached......its whiter and more refined i think

Unbleached is oxidized naturally, bleached is oxidized synthetically. There isn't much difference, only how long it takes to make them and color. Bleached flower is treated with chemicals, though, so I guess that could make it less healthy.
