If we for some odd reason have the small eggs, I use four. Are you serious? Ostriches don't even live anywhere in Europe, as far as I know (excepting zoos and the like). Besides, you'd feed a few families with a single ostrich egg. You'd have to buy quarters of them to use them up during a breakfast.
