Three large, or two jumbo.

If we for some odd reason have the small eggs, I use four.

If Im making it for a few days, then I will sometimes use as many as an entire dozen, just depends on how far out Im making it for (they keep for a good week or so) and if my family will be eating it.

Ha ha. Are you serious? Ostriches don't even live anywhere in Europe, as far as I know (excepting zoos and the like). Besides, you'd feed a few families with a single ostrich egg. You'd have to buy quarters of them to use them up during a breakfast.
