Anything Vivaldi. That's why I started playing the violin, actually. When I was 10, my uncle got me a recording of the Four Seasons, and I was like, "Wow, I want to play this someday." 7 years later and I actually can. Haha.
I like playing musical scores as well. Right now I'm doing Brigadoon, and I did Beauty and the Beast a couple years ago. But my all-time favorite is Les Miserables. I've never had the chance to actually play for it though.

Matteo Carcassi's pieces are fun to play, and have a really pleasant feel to them. Anything by Nobuo Uematsu you can convert to classical guitar is nice aswell.
