My dad's a consultant anaesthetist, so I know the sort of stuff he deals with, and while it may not be as physically demanding (you're not the one cutting open the patient) they still have stress to deal with. The wrong dosage could mess every thing up. Too little, and you risk the patient waking up during the procedure and freaking out.
