I've looked all over the internet.  All they've got is the Friday's recipe or other random vanilla bean cheesecake recipes... but they shall never be the same!  Yes, I'm really into this.

oh my god! I am not even kidding you, last night I went to the Cheesecake factory in the first time since forever and now this makes me want to go on this recipe hunt with you! lol

BAM!! I FOUND IT

Cheesecake Factory Vanilla Bean Cheesecake
1 envelope plus 1 1/2 teaspoons unflavored gelatin
1/4 teaspoon salt
1/3 cup cold water
1 1/2 cups milk
6 egg yolks
1 1/2 teaspoons vanilla extract
3/4 cup sugar
1 1/2 cups heavy cream, whipped

1. Soften the gelatin in cold water and set aside for later use.
2. Beat the egg yolks in the top of a double boiler until light and lemon colored. Gradually beat in the sugar. Add the salt.
3. Scald the milk and gradually stir it into the egg mixture. Cook over hot, not boiling, water until thickened, stirring constantly.
4. Blend in the softened gelatin and vanilla. Chill until the mixture begins to thicken, stirring occasionally to prevent a crust from forming on the surface.
5. Fold in the whipped cream and spread cream mixture onto cheesecake.
Chill until firm.
6. Garnish with lightly sweetened whipped cream.

I found a PDF on my hard drive with a bunch of other recipes from other resteruants im still confused on how it got there

stupid question - where's the cheesecake part of this recipe?  i'm assuming this is just the top 'creamy' layer.

step 5:
