I know government jobs can enforce weight standards military, law enforcement, NASA ect. but I'm finding it difficult to find private sector jobs that are allowed to enforce such policies. I googled it with no solid returns.

Modeling agencies, acting agencies, etc. It's technically illegal, but it's well known that they impose weight requirements.

This. Also works in the flip way. Some Modeling agencies have banned the usage of models underweight.

This. Also works in the flip way. Some Modeling agencies have banned the usage of models underweight. 
Yep. And some boards for fashion week has set minimums.

I was looking for companies US or other wise that allowed enforced weight standards. I read a few article on obese/smokers not being able to be covered by a company's insurance policy but I'm looking for actually legal weight standards.

I would think some medical profession would have weight standards on their nurses or personnel who work in nursing homes. A job were first response is crucial to ones well being.

Hmm. A number of years ago I read about casinos and clubs in Vegas that would hire cocktail waitresses and then monitor their weights. I'm not sure if that's still in effect though.

It's not going to be in the US because that's illegal. It's an unwritten rule. The insurance thing is as far as you'll get here. Try another country.

airline staff, modelling agencies (thus a company) and some waitresses will have these imposed on them. however it won't be written in an explicit way because as others have said, it's not legal. why do you need to find enforced weight standards? is it for an assignment or something?
