Two days ago I had my eHelps to reply to down to about three. This is my second day without replying to one (I'm feeling really crappidy at the minute - I don't think I'd reply to my fullest capacity at the minute) and it's up to twenty-six! Is this a regular occurence? Because I find it quite stressful when it reaches such a big number.

Yep, it happens. Don't get stressed. There are like 150 of us, I think. It's not like anybody is watching you specifically. And at least you push yourself to answer a few. That's something not all of us do (e.g. me).

Gah, that happens to me all the time. All we can do is answer as many as you feel capable of, and hope that others do the same. Sometimes I also look at Show All, and end up replying to eHelps that are no longer "new" (due to them already having two replies), which, although still helpful, doesn't bring down the number.
